What causes acid reflux and what should I eat?

Uncomfortable heartburn symptoms like burning in the chest and throat can be downright awful. If you’ve ever wondered what causes acid reflux, it can be any number of things. There are many trigger foods, but there are also many other foods that are healing, and can prevent those bouts of heartburn.

Trigger foods generally include anything spicy or fried. Coffee, carbonated beverages, citrus foods, and dairy can also be culprits. You’ll need to replace those foods with whole grains, fruits and vegetables, and other healthy foods. Some good choices include low-fat protein like chicken breasts or egg whites, non-citrus fruits and vegetables, and whole grains like quinoa and brown rice.

This breakfast taco recipe is extremely nutrient dense, doesn’t contain any heartburn triggers, and is sure to satisfy your craving for some good Mexican food. The black beans are filled with protein and fiber, the sweet potatoes and carrots are packed with vitamins and minerals, and the olive oil is a healthy fat. There is so much flavor here that I promise you won’t miss traditional heartburn-triggering foods like peppers and tomatoes in these tacos.

Ingredients:


  • 1 small sweet potato, cubed, preferably organic
  • 1 medium carrot, peeled and sliced, preferably organic
  • 1 tablespoon of extra virgin olive oil (cold pressed and organic preferred)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • Zest of 1/2 lime
  • 1 cup mashed black beans, organic if possible
  • 2, 6-inch corn tortillas, non-GMO and sprouted ideally

Directions:
Preheat the oven to 350 degrees and line a small baking sheet with parchment paper. In a small bowl, mix the sweet potatoes and carrots with olive oil cumin, coriander, salt, and lime zest. Transfer to the baking sheet and roast for 15 minutes. Once the vegetables are ready, spread the mashed black beans on the tortilla and top with the veggies.
