Recipe of the Month: Chicken and Goat Cheese Skillet

Why is goat cheese forgotten about so often? It contains nutrients that are beneficial to your health, like healthy fats, proteins, vitamins, and minerals. Plus it digests differently, making it a hypoallergenic alternative for cheese lovers who can’t digest cow’s milk. Pair it with chicken and some fresh veggies, and you’re in for a decadent, healthy meal that will keep you satisfied. We love this recipe.


Ingredients:

½ pound of boneless chicken breasts, cut into 1 inch pieces

¼ teaspoon salt

2 teaspoons olive oil

⅛ teaspoon pepper

1 cup fresh asparagus, cut into 1 inch pieces

1 garlic clove, minced

3 plum tomatoes, chopped

2 tablespoons milk

2 tablespoons herbed fresh goat cheese, crumbled


Directions:

  1. Toss chicken with salt and pepper in a large skillet and cook over medium heat, making sure to saute the chicken until it’s no longer pink (about 4-6 minutes)
  2. Add asparagus to the skillet, cook and stir for 1 minute
  3. Add garlic and stir for 30 seconds
  4. Add tomatoes, milk, and cheese, then cover until the cheese begins to melt (about 2-3 minutes). Stir all ingredients
  5. Enjoy!
