Grilled romaine salad

Nothing says summer like a backyard BBQ! Now with restrictions finally lifting somewhat, it’s a great time to enjoy the outdoors with a few close friends or family. I always like to switch it up a bit by pairing traditional favorites like juicy, grass-fed burgers with something light. A grilled romaine salad is a great choice.

Romaine lettuce has some incredible health benefits. It’s very high in minerals including calcium, magnesium, and potassium. It’s also packed with vitamin C, vitamin K, and folate. These all help with things like eye health and heart health. The vitamins and minerals in romaine also help prevent signs of aging, protect bones, and promote weight loss. Added bonus: you’ll look like a master chef when you serve this salad (but you don’t actually have to be one. It sounds a lot fancier than it is.)

Ingredients:

  • 2-3 romaine hearts
  • 3 tablespoons of cold-pressed extra virgin olive oil
  • 1 tablespoon of fresh herbs (rosemary, basil, and lemon thyme is delicious)
  • 1 tablespoon of apple cider vinegar (or red wine vinegar)
  • Roasted pumpkin seeds
  • Salt and pepper to taste


Directions:
Slice the romaine hearts in half lengthwise. Peel off any old leaves. Whisk together the olive oil, vinegar, herbs, salt and pepper to make a vinaigrette. Grill the romaine hearts, cut side down, until there are grill marks, approximately 3 minutes. Top with roasted pumpkin seeds and serve immediately.
