Watermelon Feta Salad

Nothing quite says summer like a big, juicy watermelon. Besides satisfying a sweet tooth, watermelon is filled with all sorts of nutrients, and is very hydrating - which is especially important in the hotter weather.


Ingredients:

  • 8 lb watermelon, cubed

  • 1-2 cups of fresh mint OR arugula, chopped

  • 1-2 cups feta cheese, crumbled or cubed

  • ½ cup extra virgin olive oil

  • Juice of one lemon

  • Salt and pepper to taste


Directions:

  • Place the feta, mint/arugula, and watermelon in a large bowl and gently mix with hands or a wooden spoon

  • In a separate bowl, whisk olive oil, lemon juice, salt, and pepper to form a dressing

  • Pour dressing on top and gently mix with a wooden spoon

  • Place in the fridge to chill and serve
