Treat Yourself with These Berry and Coconut Popsicles

On these hot summer days, nothing is more delicious than a cool sweet treat. While there’s nothing wrong with indulging in some ice cream every once in a while, I wanted to share my favorite homemade, healthy popsicle recipe. These pops have no refined sugar but are filled with nutrients. And, most importantly, they are delicious and refreshing. You can use any fresh fruit you want, but I love using berries because they offer tons of health benefits and lots of flavor. They also only take about 10 minutes to prepare, so you can spend more time enjoying the sunshine.

For this recipe, you’ll be using blueberries, strawberries and raspberries. Blueberries are rich in Vitamin K, which is important for bone health, and anthocyanins, which can reduce oxidative stress. They also may lower “bad” (LDL) cholesterol and the risk of heart attack and diabetes. Strawberries are high in Vitamin C and also have been shown to improve heart health and control blood sugar levels to help prevent diabetes. Raspberries also reduce oxidative stress and are a great source of fiber.

These popsicles also contain coconut water (not to be confused with coconut milk) which forms naturally, contains 94% water and is low in fat. It can potentially lower blood pressure and prevent blood clots, as well as help your body rehydrate and restore electrolytes after exercising.

Now that you know all about the benefits of these tasty popsicles, let’s get started!

You’ll need:


  • A popsicle mold (any kind)
  • Fresh blueberries
  • Fresh strawberries, sliced
  • Fresh raspberries
  • Coconut water

Directions
Fill your popsicle mold with berries, then pour in the coconut water until filled to the top. Insert popsicle sticks. Freeze for at least 3 hours, then enjoy!
