Hearty Egg Casserole Recipe

This egg casserole is a healthier spin on a traditional comfort food.

The eggs and bacon are protein packed, cheese is a healthy fat (just don’t go overboard in one sitting with it), and there’s no such thing as too many leafy greens! You can even make it your own by adding more of your favorite veggies.


It’s easy to prepare, so the “I don’t have time to cook” excuse can go right out the window, plus you get multiple servings out of this. That makes it a great grab-and-go choice for lunch during the work week. Give it a whirl and let me know what you think!


Ingredients:

  • 1 pound organic bacon or sausage

  • ½ chopped onion

  • 1 ½ cups of shredded cheese, divided

  • 12 eggs

  • 2 cups heavy whipping cream

  • ¼ teaspoon ground nutmeg

  • Salt and pepper to taste


Directions:

  • In a large skillet, cook bacon until crispy, then remove and crumble.

  • Add onion to the skillet and cook over medium heat until translucent

  • Remove from heat and stir in 1 cup of cheese, spinach, and any other veggies you like

  • Transfer everything to a greased 13 x 9 baking dish

  • In a separate bowl, beat the eggs, add cream and nutmeg, and mix well

  • Pour over meat mixture and bake uncovered at 350 degrees until a knife inserted in the center comes out clean

  • Sprinkle with remaining cheese

  • Let stand for 5 minutes before cutting
